Traveling & Granola Bars

I think all of us New Yorkers that have been wishing for sunny, warm weather are rejoicing this week!

I am definitely one of these people, but I could have done without the humidity during my (failed) 7.25 mile tempo run on Tuesday.

GUH. The air was thick and my legs felt like they weighed 1,000 lbs each. This was one of the few times I’ve actually felt like stopping mid-run and calling it a day. But I chalked it up to being an off day, and definitely think I need some time to get used to this sudden summery weather.

Some easy miles with Megan and Maria on Wednesday morning were  just what I needed to recover and feel a bit better, followed by another easy 7 miles this morning.

I almost can’t believe it’s already Memorial weekend, but am super excited for a weekend getaway with some lady friends.

Since I’m anal and type A with a side of crazy control freak, traveling tends to stress me out. Getting used to a different schedule, in-flight anxiety (I’m not the best of flyers), fitting my runs in and not having my go-to foods on-hand can be a little overwhelming! But traveling to a new place, seeing friends and getting a break from everyday life is definitely worth a little Kelly-induced anxiety in my book.

What helps ease my travel-related stress is to get super organized and make sure I’m prepared. So even though I’m not leaving until Friday, I’ve been packing my bag since Sunday with everything I think I’ll need (and made a detailed list, obviously…).

I also like to make sure I have plenty of snacks on-hand in case there is no grocery store near my hotel or I want a cheaper (and healthier!) alternative to room service. So I attempted to make my own granola bars for easy snacks and breakfasts. I used a recipe from Megan’s blog, which was so easy to tweak and just add whatever I wanted.

The goods involved peanuts, oats, sunflower seeds, raisins, dried cherries, nut butters and walnuts, to name a few.

After combining wet and dry ingredients (details in the recipe below!), all you have to do is pack them into a pan and bake for about 30 minutes.

And once lightly browned, you’ve got some delicious granola bars

Ingredients:

  • 1 2/3 cup rolled oats
  • 1/2 cup granulated sugar
  • 1 tbsp flax seeds
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2  cup raisins
  • 1/3 cup peanuts
  • 1/3 cup sunflower seeds
  • 1/4 cup dried cherries
  • 1 tbsp chopped walnuts
  • 1/2 cup peanut butter/almond butter mixture
  • 5 tbsp melted Earth balance
  • 1/4 cup agave nectar
  • 2 tbsp light corn syrup

Preheat the oven to 350°F. Line an 8″ x 8″ with parchment paper, letting it hang over the sides a bit. Lightly coat pan and parchment paper with cooking spray. Stir together all the dry ingredients. In a separate bowl, mix together the Earth balance, agave and corn syrup. Combine the dry ingredients, wet ingredients, and nut butter until evenly crumbly. Pour into pan and pack down. Use a piece of parchment or saran wrap to prevent it from sticking to your hands. Bake for about 30 minutes or until lightly browned. Allow to cool completely before cutting into bars.

These turned out really crumbly, and while they don’t quite resemble “bars” they are like crack, they’re so good. I think reducing the corn syrup a tad and increasing the amount of oats I used may reduce crumbly-ness for next time.

    I’m the world’s most anxious traveler (bet you’re surprised to hear THAT!). If you see me at the airport or on a plane you’ll think I look cool as a cucumber, but you won’t realize that I only got about 2 hours of sleep the night before. EVERY time I go on a trip – EVERY TIME – I deal with packing anxiety by procrastinating and doing all my packing at like 2am. I can be going home to my parents for a weekend – doesn’t matter!

    Gah! The humidity! I remember that feeling (this current stormy weather is not good for my outside running). It really does kill, but honestly, I feel that much more accomplished after the workout is over.

    It’s the little things… lol

    I’m so impressed you can get up every am and run. I’m a terrible morning runner, but in my research yr/this summer want to try to get used to it!

    Tempos are hard for me regardless of humidity! Trying to get better at those.

    I hate flying (get nervous) but don’t let it stop me from going anywhere. I carry pickybars with me everywhere for a good, healthy snack in a pinch.

    For the record, I HATE tempo runs. I usually do them on the treadmill because every time I try to do one outside I blow up.

    I’m a laid back flyer/traveler. I generally underpack and rarely take snacks or anything. No tips other than just relax.

    Traveling can stress me out, I think it all depends upon who I am traveling with. When I’m with my boyfriend he doesn’t stress me out too much but sometimes family travel does because I feel like since I’m an “adult” but not a key decision maker I don’t have control of where we go and what we do. And I most definitely like to be in control:)

    I feel you on the rain and humidity up here in Boston! CAn’t get hydrated for the life of me.

    Are you going anywhere fun? I am off to the Cape for a half marathon! I do get nervous about the food when I go on trips specially to run, so I pack and plan ahead too!!! I think planning if you get stressed is a great way to go :) Have fun! Relax, it is a vacation!

    I also had issues with those granola bars being crumbly…I might need to make them again and try to figure out a solution! Try putting them in the fridge – that might firm them up.

    I used to be a really nervous flyer, but now I have a Rx for Xanax! Heh, I’m serious.

    I’m traveling this weekend too and am a bit nervous about it, though mostly because I’m driving for a long time by myself. Even though I’ve done the drive a million times, I get stressed that something might happen. I hope your travels go well and you have an awesome weekend!!

    And the granola bars look delicious! I love how many things you added to it and how easy it is to customize. I need to make something like this for my own trip. Having plenty of snacks in the car means less stopping which means I get there faster. Which is always the goal :)

    Except for the flying part (I can now fall asleep before takeoff), I’m like you when it comes to traveling. My husband and I always pack a little food bag when we travel, even when flying, with fruit, some veggies, crackers or larabars, trail mix…. we don’t like to count on airports for food if we’re hungry and it’s good to have something on hand if we can’t get anywhere withe fresh food right away. When I was a kid, every time we took a trip or I went to camp, I’d start writing my packing list at least a week before. It was always exciting to think about what was coming but I wanted to make sure I didn’t forget anything!! I still write lists sometimes! Hope you have a great weekend!

    i get a little paranoid about traveling, but not the point of excess. if i forgot anything, i can just buy whatever that is at whatever location. and in terms of food, i’ll survive a few days with things i don’t normally eat. no biggie. i like the change of pace. :)

    Humidity is NOT my friend, but I’ll take it over cold and ice :) I find that I get super stressed out while traveling, just make sure to plan ahead and do things in advance so that you aren’t scrambling around last minute.

    I just made homemade granola bars yesterday! I make them without baking and use maple syrup and peanut butter as my binding agents..they stay nice and moist and delicious

    Running in the heat is so hard and draining – props to you for finishing! Traveling stresses me out when things start to go wrong, when I’m alone, and/or when I am totally unfamiliar with the place I’m traveling to. I think being organized, and packing plenty of homemade snacks are both great ideas! My favorite trips are those that have some “structured” activities and some free time when I can just relax/explore/run. I hope you have a great time, Kelly! And a little deep breathing on the plane can’t hurt ;)

    Oh I’m totally with ya on the traveling stressing me out. I am a horrible flyer so lots of times, I enjoy a glass of wine (or 5) when I travel. This sets me off my routine even more! I guess my tip is to accept ahead of time that you’ll be getting off your routine and that it’s okay :-)
