Secret Santa & Cookies

Today is my first official day of vacation from work (two weeks, holla!) – but not so fast – I still have one last exam tonight! I just need to focus on vitamin B12, C, E, biotin, selenium, pantothenic acid, riboflavin and niacin for another 6 hours or so (gahhhh) and I’m home free.

While I’m partial to marathon-long study sessions in the library or at Starbucks, I’ve also learned through the years that homegirl needs a break every now and then. Plus I’m convinced that taking breaks between study sessions helps me retain information (yep, that’s my story and I’m sticking to it).

Break #1
One thing I love doing when I get home from hitting the books is baking, and I tried a new recipe on Saturday from Liz’s blog Little Bitty Bakes. I basically salivate at her delicious creations every day and had to try her Nutella Cookies with Sea Salt Sprinkles. Because Nutella is the best thing ever invented, obviously.

I think I made them bigger than I should have, but they turned out pretty delicious. I made a few tweaks to the recipe, mainly because I forgot to buy all-purpose flour, sea salt and butter (oops?).

Nutella Cookies with Sea Salt Sprinkles

  • 5 tablespoons sprinkles, 1 tbsp sea salt ( I used red and white sprinkles to be festive)
  • 1 cup Nutella
  • 2 tablespoons Earth Balance vegan butter
  • 2 cups whole wheat flour
  • 1 tbsp vanilla extract
  • 2 large eggs
  • 1 1/2 cups sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt

Heat the oven to 375 degrees F.  Line cookie sheets with parchment paper. Stir the sprinkles and salt in a shallow dish; set aside.

In a large mixing bowl, mix the butter, Nutella and sugar until mixed well.  Add the eggs and vanilla and stir until mixed.  In the same bowl, add the baking powder and salt.  Add the flour, 1/2 cup at at time, until mixed well.

Roll the dough into 1 1/4 inch balls, then roll each ball in the sprinkle/salt mixture to coat completely. Place two inches apart on prepared cookie sheets. Bake 10-12 minutes. Allow to cool 2 minutes before removing from cookie sheets and setting onto wire racks to cool completely

I strategically planned my Sunday study schedule around a very special holiday gathering, otherwise known as the Sweat Squad Secret Santa Brunch Extravaganza.

Ali hosted the Sweat Squad – Lindsay, Meggie, Megan, Susan and myself – at her apartment yesterday afternoon for treats, presents and a whole lotta gabbing.

We fueled our present-opening and chattering with cracker sandwich things, cupcakes, cookies, some kind of saltine-chocolate creation from heaven and of course, mimosas. I had Ali for my secret Santa, and since I know my girl loves a good knee sock (and leg warmer), I think I did good.

Before we knew it, it was almost 7:00 p.m. Six hour brunches FOR THE WIN. Next time, I propose a brunch/sleepover.

I’ll take any excuse to get together with the sweat squad, but adding presents, baked goods and mimosas into the mix = best Sunday ever. Laughing for six straight hours with some of my favorite people reminded me what the holidays are really about – cheesy but true. And even though the walk home from Ali’s was brisk and chilly, I had a serious case of the warm and fuzzies.

    Aw, how cute are you guys?? I love Secret Santa — I love picking out gifts for people, but my husband’s family isn’t big on presents between adults (and my family is just me and my parents), so I have to get my jollies in other ways. Secret Santa, Angel Tree, toy drives — you name it, I’ll shop for it.

    Secret santas are the best! I did one this year with my school’s newspaper and my secret santa somehow found out that I was running a marathon and got me a book about running. It was perfect.

    I haven’t done a Secret Santa swap in a long time (I think the last time was four years ago…) but I did partake in a Yankee swap/white elephant gift exchange the other night at my friend’s holiday party! It was great!

    Baking is absolutely the best way to take a break!

    Attention everyone – Kelly’s cookies were the best thing I ever ate (yup, just like the name of that Food Network show). I am desperate for more and will try to make them myself this week, but they probably won’t be as good.

    I’ve done a few secret santas in my day. They’re so much fun! We considered doing it this year in my group of friends but it’s hard to coordinate when we all have such different schedules!

    When I need a break, I try to reserve time for social stuff – like a good dinner with friends, and also some quality alone time to read, shop, watch old movies, or if I’m feeling really beat up, get a massage.

    I havent done secret santa in way too long. My family switched over to yankee swap, too (aka chinese pollyanna…aka everyone brings a gift, puts it in the middle, and picks numbers – etc). I like buying for specific people, though.

    When I went from Aerospace to Education I was indoctrinated ino the Secret Santa bit. There the ladies ruled so I joined in on the ‘fun’ as it was called. I did get some nice secret pals though. :)

    I cannot recommend your cookies more highly. I did not even feel the need to fill up on healthy stuff before diving in as I knew you made them with whole wheat flour and vegan butter. Obviously, this means they were healthy.

    I also cannot recommend a brunch until 7 pm more highly. Let’s repeat. I’ll actually bring something besides Picky Bars!

    The cookies look and sound amazing (and judging from the comments, clearly come highly recommended). The entire day sounds like such a blast. All of you make me wish I lived in NYC….and hopefully I would be cool enough to be allowed into the sweat squad ;)

    So cute! I love the idea of doing a brunch with girlfriends. Best Ever. I have to take breaks from studying too. Otherwise I get overwhelmed and exhausted. I go on walks or plan it out so I have something else going on so I can leave and come back to it.

    You have just completely saved me. I’m going to a “foodie” book club/dinner party on Thursday, where we read Grant Achatz’s book and then bring some food to share as we discuss. I have been trying to figure out what on earth to bring, and I think sea salt/nutella cookies are very appropriately gourmet… not to mention delicious! Thanks :)
