Mushroom Stuffing with Shallots and Fresh Herbs (source)
Ingredients (makes 10 servings)
- 3/4 loaf sprouted whole grain bread
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 lb crimini and white mushrooms, chopped
- 2 large shallots, chopped
- 3 celery stalks, chopped
- 1/3 cup chopped mixed fresh herbs (thyme, sage, rosemary)
- 1 1/4 tsp salt
- 1/2 tsp pepper
- 3 cups vegetable broth
Instructions
Cut bread into cubes and spread onto baking sheets. Bake at 300° for 15 minutes and set aside in a large bowl or bowls. In a large skillet, heat oil and butter over medium-high heat. Add mushrooms and cook, stirring frequently unter tender (about 10 minutes). Stir in shallots and celery and cook three minutes. Stir in herbs, salt and pepper. Remove from heat and spoon mixture over bread along with the broth. Mix together and let sit for a minute. Spoon stuffing into a large baking dish and baking until browned and crisp (about 45 – 50 minutes). Mix together and serve!
