Pomegranate, Persimmon and Arugula Salad with Grapefruit Dressing

Ingredients

  • Seeds from one pomegranate
  • 3 persimmons, cut into chunks
  • 4-5 cups arugula
  • Juice from 1/2 grapefruit
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

Combine arugula, pomegranate seeds and persimmon chunks in a large bowl. Mix grapefruit juice and olive oil together in a separate bowl and add salt and pepper to taste. Drizzle over top salad and serve.
